Gluten-Free, Dairy-Free Banana Chocolate Chip Muffins
I know what you are thinking... I have to go buy some weird kind of flour don't I?
I came across a recipe that sounded way too good to be true, so naturally I had to try it out to see if it actually tasted as good as it sounded, right? Well my friends, with a few tweaks to the recipe, I've struck gluten-free, dairy-free, sans weird ingredient, banana muffin gold and I'm here to share it with you.
World's Greatest Guilt-Free Muffins
(Well, too much of anything can make you feel guilty.)
Makes 6 muffins
1/2 cup peanut butter (smooth or crunchy - can substitute almond/sunflower)
3 tbsp of natural sweetener (honey, maple syrup, agave)
1 tbsp of vanilla extract
1/4 tsp of baking soda
pinch of salt
1/2 cup of chocolate chips (in order to keep the recipe dairy-free, you need to use dairy-free chocolate chips... I like these Enjoy Life ones.) OR cacao nibs
This is the best part... throw everything except the chocolate chips into a blender! Add the chocolate chips afterwards and pour into muffin tins (line with cups or lightly grease).
Bake at 400 F
mini muffins: 8-9 minutes
regular size: 14-16 minutes
Or until golden brown and you can cleanly poke with a toothpick.
*This recipe is not vegan due to the use of an egg. I haven't tried it, but I heard you can substitute 1/3 cup applesauce for an egg.*
